AFAIK there's no snap or flatpak version, although this has been discussed in the past. Running Debian stable (which v12 currently is, AFAIK) typically gives you older software versions, but I guess you have good reasons for sticking to it.

Compiling the latest gretl versions yourself is fairly straightforward on Debian, see Appendix B of the gretl user guide. However, there's a reason for software packaging, and if you're compiling yourself, you're moving beyond the packaging system (apt etc.), of course. Hence I wouldn't always recommend it.
