A more efficient way of dealing with this might be: (a) save the graph as a session icon, (b) right-click on the icon and choose "Edit plot commands", (c) change the titles of the variables as you wish.

Note that in gnuplot the "key" is automatically constructed using the titles provided for the variables in the "plot" command, as in plot <whatever> title '<title>' ... In gretl's GUI graph editor you can change the title per line, under the "Lines" tab, but the "(left)" or "(right)" tags are not editable, they are added automatically, which makes sense since the graph editor allows you to switch variables between axes.
