I run my copy from a USB stick all the time. One of the main reasons I use
it for teaching....

Assuming the lab is running on Windows, here's a quote from
http://gretl.sourceforge.net/win32/: "If you have no administrator
rights on Windows choose a zip archive from the third column; unzip this
in any location where you have write permission."
I haven't tested this (recently) but it should in theory be your solution.
