If I show Gretl to students on Zoom, pressing "Model -> Ordinary Least
Squares" creates a new window. Regression results are also displayed in a separate
window. If I use Zoom and "Share Screen" and select "Gretl", only the
main Gretl window shows for my students.

I don't remember if I tried it in Zoom, but in some other video systems
it worked nicely with all the different gretl windows that were
automatically recognized and picked. But that information alone probably
doesn't help you.
You could share the entire screen I guess, instead of just a single
application. Maybe creating a virtual desktop and associating gretl with
that desktop could make that easier. (From what I read Apple calls that
feature "Spaces".)
As a more radical solution, you could also run a virtual machine and
that way all gretl windows stay in the window of that machine, which you
could then share.
At the latest gretl conference there were some discussions about a
single-window layout, but other new features had higher priority AFAIK.
