Thanks for your reply! I was hoping you had the key to this, I really did.
After running:
sudo apt-get install texlive-latex-extra texlive-fonts-recommended
texlive-fonts-extra
and then:
cd gretl-git
make pdfdocs
most of it ran well, until I started running into a blizzard of warnings
and the odd errors, culminating in this:

Ah, this is not unexpected, and it's mainly the reason why the
doc-building part is optional; "make pdfdocs" wil try to build several
documents, including the User's Guide, the Command Reference etc, which are
pretty hefty and depend on quite a few LaTeX packages.
Therefore, spotting what goes wrong may not be that easy. Usually, it's
missing bits in your TeX setup. For example, you'll need packages like
appendix.sty and pifont.sty.
If you're using a Debian-derivative distribution, such as Mint or Ubuntu,
usually all it takes is installing a few extra packages.
"texlive-latex-extra" and "texlive-font-extra" should be sufficient,
IIRC.
